I swear when God made mangoes he was in the mood for candy. When ripe, they literally taste like dessert. When I went to the DR with my sister in October, I pretty much ate down the entire stock at the breakfast buffet (no shame). Now that they’re in season here, I’ve been having mangoes before a workout and as an evening snack as we move into the summer months. I mean, I am going to be hitting Miami in like three weeks, which I can’t wait for. So naturally, three weeks out I’m taking steps to get swimsuit-ready like I’ll magically transform my winter habits into fabulousness.
I can’t wait to scope out the best spots to eat and drink down there and give you guys the details. I’ll also be shooting some great summer and vacay outfit ideas for You Must Love Life. My good friend, who is also a food lover, moved down to Miami a couple of years ago. I’m sure she’s already got a laundry list of places we have to try before and after hitting the beach.
Speaking of eating, I’ve been trying to switch up my morning breakfast game with different versions of avo toast. Not being a big poached egg person, I went on a mission to create some unique ways to enjoy the Millennial staple. What’s great about avocados is they’re a neutral canvas for both savory and sweet flavors. This chili mango avocado toast works for both breakfast and dessert. I added in garam masala and mint. Gives it a Mediterranean vibe that I really dig. The result is a deliciously sweet and slightly spicy toast that’s got plenty of Vitamin C & potassium. Here I come, beach!
