Another day, another avocado toast. Continuing my series this week sharing new ways to switch up your avo toast game. This one is great for adding protein, making it more of a substantial meal. It’s also got refreshing cucumber, which adds crunch and is soooo good during those summer months.
Somehow we’ve gone from 50 degree weather to a 90 degree heat wave in NYC this week. I’m literally writing this blog while sitting in a slip with a fan blowing directly at me. And the pup is flopped out in front of the fan, too. Me and the hubs are hitting a party tonight, and I’m trying to strategize how I can wear my new ruffle bottom flair trousers from Zara (outfit inspo with these pants coming to You Must Love Life soon!) without sweating buckets. Not sure if I’m gonna win at this no sweating game. But I will tell you what’s no-sweat: This Cucumber & Hummus Avocado Toast, since it takes all but 5 minutes to make. (Sorry, had to with that pun.)
