Another day, another avocado toast. Continuing my series this week sharing new ways to switch up your avo toast game. This one is great for adding protein, making it more of a substantial meal. It’s also got refreshing cucumber, which adds crunch and is soooo good during those summer months.

Somehow we’ve gone from 50 degree weather to a 90 degree heat wave in NYC this week. I’m literally writing this blog while sitting in a slip with a fan blowing directly at me. And the pup is flopped out in front of the fan, too. Me and the hubs are hitting a party tonight, and I’m trying to strategize how I can wear my new ruffle bottom flair trousers from Zara (outfit inspo with these pants coming to You Must Love Life soon!) without sweating buckets. Current strategies are:

  • Cut holes in my tank top Regina George Mean Girls style
  • Take car just for the air conditioning (yay for 30% off JUNO deal!)
  • Botox my entire body before 3pm — I’ve heard it stops you from sweating?
  • Claim that I just got caught in a random rainstorm that no one else saw (I think I’m just giving up at this point…)

Not sure if I’m gonna win at this no sweating game. But I will tell you what’s no-sweat: This Cucumber & Hummus Avocado Toast, since it takes all but 5 minutes to make. (Sorry, had to with that pun.)

Total Time: 5 minutes

Yield: 1 avocado toast

A refreshing avocado toast recipe with hummus, crunchy cucumbers, sesame seeds and sesame oil.


  • 1/2 avocado, mashed
  • juice of 1/2 a lime
  • salt & pepper, to taste
  • 1 slice good bread (rye, pumpernickel, or nutty options work best), toasted or untoasted
  • 1 to 2 tablespoons hummus
  • 1 mini cucumber, thinly sliced with a vegetable peeler, mandolin or knife
  • pinch of chili flakes
  • 1 tablespoon sesame seeds
  • drizzle of sesame oil (can sub with olive oil)


  1. In a small bowl, combine mashed avocado, salt, pepper, and lime juice.
  2. Spread a layer of hummus onto the piece of bread.
  3. Add a layer of avocado mixture on top of the hummus.
  4. Add a layer cucumbers.
  5. Sprinkle on chili flakes and sesame seeds.
  6. Drizzle with sesame oil.
