When the air gets crisp, I find myself longing for a fall cocktail that will warm my blood a little. The Aperol Spritz was my jam during summer. It was great for a weeknight treat because it’s light enough to NOT leave me with a hangover if I have two, and it’s super refreshing. But when October hit, I retired the spritz to be missed until summer rolled around again next year. That is until I got ahold of the So It Appears cocktail at the Italian-inspired Carroll Gardens bar August Laura. It’s the fall twist on the Aperol spritz I’ve been waiting for all my 21+ year life. I got the scoop on the recipe from owners Frankie Rodriguez and Alyssa Sartor, vets of hotspots Death & Co. and the Bar Room, so even if you can’t make it to the bar (which you should!!), you can make it for yourself at home.

Definitely consider this when thinking of cocktails come Thanksgiving and holiday season. It will for sure be a crowd pleaser!

'So It Appears' Fall Cocktail

Prep Time: 2 minutes

Yield: 1 cocktail

A light, refreshing cocktail infused with the flavors of fall. A seasonal take on the Aperol spritz that's great for holiday parties.


  • ¾ ounce of lemon juice
  • dash of vanilla extract
  • ½ ounce of simple syrup
  • 1 ounce of Aperol
  • 1 ½ ounces of Prosecco
  • ½ ounce of club soda
  • pear slices (optional, for garnish)


  1. In a cocktail shaker, stir together lemon juice, vanilla extract, simple syrup, and Aperol.
  2. Pour Into a wine or high ball glass filled with ice.
  3. Top with Prosecco & club soda.
  4. Garnish with pear slice.
