FALL PEAR SALAD {10 MINUTE MEALS}

Whew, what a couple of weeks this has been! People always say that schedules really heat up around fall, but this year I’ve been feelin’ it (insert GIF of every cute puppy trying not to get out of bed). Good thing there’s this quick fall pear salad to get me through long nights of work.

Part of the reason things have been so crazy around here is because I’ve been working on a few things for the YMLF site. I leaked a bit of it on Instagram, but have yet to fully disclose, so here goes. If you come here often, you’ve probably noticed a few changes in terms of how the site looks. The visual revamp to both my logo and site were much needed and preempt a new little project I’ve been working on. All of the fashion and lifestyle posts you’ve seen peppered into the blog are moving over to their own little hub, a sister site called You Must Love Life! It’s not fully up yet, but I figured it would be nice to keep this space all about food. If you’re not about that fashion & style stuff, you can stick here to You Must Love Food. And no, I haven’t just been hunched over a computer over here like a World of Warcraft gamer. I’ve also been developing a majorly delicious lineup of seasonal recipes, like this fall pear salad. It’s safe to say that fall produce is my absolute favorite. I may have gone a little overboard at the farmer’s market last weekend (shoutout to BF for carrying like 30 bags of heavy-ass squash and fruit). What I love about this salad is that it features lots of what’s in season now. It’s a little sweet, a little savory, and packs in crunch, which I ALWAYS want regardless of what I’m eating.

FALL PEAR SALAD {10 MINUTE MEALS}

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 3-4 servings

Ingredients

    Balsamic Vinaigrette Dressing
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoon red wine vinegar
  • 3 tablespoons brown sugar
  • salt & pepper, to taste
  • Salad
  • 4 cups mesclun greens
  • ¼ cup pomegranate seeds
  • 1/4 cup unsalted pepitas
  • handful roasted unsalted almonds
  • 1 pear, halved and thinly sliced
  • 1/4 cup crumbled blue cheese

Instructions

    Prepare the Balsamic Vinaigrette
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, red wine vinegar, brown sugar and salt & pepper until the mixture emulsifies. Set aside.
  2. Make the Salad
  3. In a large bowl or platter, toss together greens, pomegranate seeds, pepitas, almonds, pear slices and blue cheese.
