LOADED STEAK NACHOS

I’ve said it before, and I’ll say it again–I hate football. Watching it is the most boring (and loud) thing to do on earth. However, I will always watch the Super Bowl. Why? 1) There’s always awesome food. 2) It’s my celebration for the end of football for the season. Whether we go to a friends place or enjoy the game just the two of us, we always make some party foods. This year, it will be these Loaded Super Bowl Steak Nachos, which pretty much have all the good things known to man on them.

The fiance is an avid football fan, so he spends Sundays watching it for what seems like an eternity. This year hasn’t been as bad, but that could be because occupying myself by binge-watching Netflix on the iPad made it far more tolerable. Either way, I’m excited to finish off this year with some badass nachos. Plus, I’m pretty pumped that Lady Gaga is the half time show. I read that she was under a contract with the NFL to refrain from doing anything controversial leading up to her performance, but I bet she pulls out a few surprises come February 5th. Just like my love for food, she can’t hold back going crazy for long (Go Gaga, go!).

In past years I’ve made Loaded Sweet Potato Skins and Loaded Fries, so I thought I would keep on going with the loaded theme. There’s everything from steak and cheddar to avocado and tomato on these nachos. I did lighten things up a bit by baking my own chips from corn tortillas, but if you wanna just grab a bag at the grocery store, more power to you.

LOADED STEAK NACHOS

Total Time: 45 minutes

Yield: 4-6 servings

The ultimate nachos, loaded with steak, cheese, tomatoes, jalepeno, avocado and more.

Ingredients

  • For The Chips:
  • 10 tortillas, cut into triangles
  • cooking spray
  • salt
  • For The Nachos:
  • 2 tablespoons olive oil
  • 1 pound sirloin steak
  • salt
  • 1 teaspoon paprika
  • 1/2 onion, diced
  • 2 cups white cheddar, shredded
  • 1 large tomato, diced
  • 1 jalepeno, diced
  • 3 mini sweet peppers, sliced
  • 1 avocado, cubed
  • 1/4 cup queso fresco, crumbled
  • handful cilantro, chopped

Instructions

  1. Make the Chips:
  2. Preheat the oven to 350 degrees Fahrenheit
  3. Arrange the tortillas in a single layer on several baking sheets.
  4. Very lightly spritz with cooking spray and bake for about 10-15 minutes, until chips are a light golden brown and crisp.
  5. Remove from the oven and salt immediately. Can be stored in an air tight container for up to 1 week.
  6. Make The Nachos:
  7. Preheat the oven to 350 degrees Fahrenheit.
  8. Heat 1 tablespoon of olive oil in a large cast iron skillet over high heat. Pat the steak dry with a paper towel and sprinkle with salt and paprika on each side.
  9. Place the steak on the skillet and sauté for about 3-5 minutes on each side, until internal temperature of the steak is 150 degrees Fahrenheit.
  10. Remove from heat and allow to sit until completely cooled. Once cool, cut into small pieces.
  11. Heat the remaining olive oil over medium heat in same skillet. Add in onion, cooking until translucent, about 5-7 minutes.
  12. Place chips in a large oven-proof dish. Add half the cheddar cheese, the steak, the sautéed onions, then the other half of the cheddar cheese. Place in the oven for about 5 minutes, or until cheese is melted.
  13. Remove from the oven and sprinkle on the tomato, jalepeno, sweet peppers, avocado, queso fresco and cilantro. Serve immediately.
