ONE PAN GREEK CHICKEN DINNER

I’ve said it before, and I’ll say it again, I’m a huge fan the one-pan and one-pot meals. They make weeknight cooking (and clean up) so much more doable, so I’m constantly testing out new recipes. This this one-pan greek chicken dinner, I’ve got to say, really takes the cake in terms of all of my recipes to date. Pulling from flavors of the Mediterranean, which I seem to have an obsession with right now, I combined lots of fresh, healthy ingredients like mint, tomatoes, lemon and olives onto one pan. All you’ve gotta do is throw it into the oven and bake it. And it’s such a show stopper thanks to all of the vibrant vegetables, that I’m definitely going to be making this for many dinner parties to come.

If you don’t have every ingredient, no worries! Just leave it out or swap it with another vegetable. Have fun and play. That’s what cooking is all about.

ONE PAN GREEK CHICKEN DINNER

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 3-4 servings

A vibrant one-pan chicken dinner packed with fresh greek flavors like mint, lemon and olives.

Ingredients

  • handful mint leaves
  • 1/4 cup olive oil, plus more for drizzling
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3 to 4 small chicken breasts or cutlets
  • 1 small red onion, roughly chopped
  • 1 cup cherry tomatoes
  • 1 lemon, cut into eighths
  • 1 small bulb fennel, roughly chopped, plus fronds for garnish (optional)
  • large handful fingerling potatoes
  • 1/4 cup Kalamata olives, pitted
  • large handful cubed feta cheese

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. In a blender or food processor, combine mint leaves, olive oil, oregano, paprika, cumin, balsamic vinegar, garlic, salt and pepper until pureed.
  3. On a large sheet pan, toss chicken breasts in half of the mint sauce, coating all sides. Set the remaining mint sauce aside for now.
  4. Add red onion, cherry tomatoes, lemon, fennel, fingerling potatoes and olives to the pan. Sprinkle on a little salt. Pour the rest of the sauce over vegetables and toss with the chicken to evenly coat everything. If needed, add a drizzle of olive oil over everything.
  5. Bake in the oven for about 35-40 minutes, depending on how thick the chicken is. Internal temperature should be 165 degrees Fahrenheit when done.
  6. Remove from oven and add feta cheese. Sprinkle on fennel fronds as a garnish (optional).
