I’ve said it before, and I’ll say it again, I’m a huge fan the one-pan and one-pot meals. They make weeknight cooking (and clean up) so much more doable, so I’m constantly testing out new recipes. This this one-pan greek chicken dinner, I’ve got to say, really takes the cake in terms of all of my recipes to date. Pulling from flavors of the Mediterranean, which I seem to have an obsession with right now, I combined lots of fresh, healthy ingredients like mint, tomatoes, lemon and olives onto one pan. All you’ve gotta do is throw it into the oven and bake it. And it’s such a show stopper thanks to all of the vibrant vegetables, that I’m definitely going to be making this for many dinner parties to come.
If you don’t have every ingredient, no worries! Just leave it out or swap it with another vegetable. Have fun and play. That’s what cooking is all about.
Quick and easy dinners have been my lifeblood these past couple weeks since things with the blog have gotten crazy busy.
